Recipe Corner

Old Fashioned Gingerbread

Ingredients:

1/2 cup white sugar
1/2 cup butter
1 egg
1 cup molasses
2 1/2 cups all-purpose flour
1 1/2 teaspoons baking soda
1 teaspoon ground cinnamon
1 teaspoon ground ginger
1/2 teaspoon ground cloves
1/2 teaspoon salt
1 cup hot water

Directions:

1. Preheat oven to 350 degrees. Grease and flour a 9-inch square pan.
2. In a large bowl, cream together the sugar and butter. Beat in the egg, and mix in the molasses.
3. In a bowl, sift together the flour, baking soda, salt, cinnamon, ginger, and cloves. Blend into the creamed mixture. Stir in the hot water. Pour into the prepared pan.
4. Bake 1 hour in the preheated oven, until a knife inserted in the center comes out clean. Allow to cool in pan before serving.

Holiday Maintenance Tip

The holidays are right around the corner and it’s time for everyone’s favorite things: That’s right…THE BIG MEAL and THE HOLIDAY LIGHTS! However, this can also bring a few maintenance issues that could potentially stop the festivities cold.

  1. When hanging your lights, make sure that you are using the proper ones. If you are on your patio or at your front door remember to use OUTDOOR lights. Moisture from rain can ruin not just your indoor lights but your outlets too and potentially start a fire! Not fun!
  2. When putting up your holiday tree, if you have a real tree, make sure to keep enough water in the stand to keep your tree nicely hydrated so it doesn’t turn into kindling.
  3. Even Bobby Flay, Emeril, and Racheal Ray have bad days in the kitchen, make sure you have a fire extinguisher nearby or know where one is in case your bad day happens to be during the holiday! (In all seriousness, every breezeway has a fire extinguisher in the white metal cabinet on the wall)
  4. When cooking, keep a pan or something underneath in case your cooking overflows. The food that falls to the bottom of the oven could start a fire or cause your oven element to short out, stopping you from making grandma’s famous apple pie (or pumpkin, or sweet potato, or peach cobbler, or whatever your grandmother was famous for baking.)
  5. The garbage disposal won’t like the gift of 5 pounds of potato skins that we generate to make mashed potatoes. It’s better to put them in the garbage can.
  6. Finally, with all the people that you may be expecting and all of your cooking, setting your thermostat to a slightly lower temperature earlier in the day will help to make sure that once all your guests arrive, they won’t be complaining about how hot it is in South Carolina!

Happy Holidays!
